Nature on the Plate
Under this motto, you can expect a two-hour hike followed by a wild plant menu.
First, we will explore the plant world in nature together and learn about various native wild plants. After that, the Vulkanhotel will serve an exclusive four-course menu that incorporates the plants presented earlier in a culinary way.
For many years, Ralf Berg has been out in nature collecting wild plants with their valuable natural bitter compounds for his kitchen. He deepened his knowledge of plant species and their use in fine dining, among other places, in a Michelin-starred kitchen in Sinzig am Rhein. He often ventured into nature with Jean-Marie Dumaine to exchange experiences and develop new recipes.
